  1. Brown the ground beef.
  2. Mix in the onions and cook until they are translucent.
  3. Add the rest of the ingredients and stir until blended.
  4. Allow the chili to come to a low boil, and then reduce to a simmer. Cook uncovered for about 2 hours.

I’ve been going to Hard Times Cafe for ages, and that was the first place that exposed me to chili with cinnamon in it. It was life-changing. Seriously. Cinnamon with beef?! It kinda blew my mind.   2. Add everything else, stir well, and bring to a boil.
  3. Simmer with the lid on for a couple of hours.

Want to make this in the slow cooker? Just follow step 1, and then throw everything into the slow cooker for about 6 hours. It's going to be a bit soupy, which is fine, because that's how Cincinnati chili is supposed to be served.

If you haven’t tried the Cracklin’ Chicken from Michelle Tam’s Nom Nom Paleo, then you have not lived. Seriously. It’s that good. Nom Nom paleo has tons of recipes, witty banter, Whole30 meals, and my current favorite: packed lunches (for kids and adults). Plus they have an app and a book, so lots of great ways to get some very good paleo recipes and other info.
