BeforeThe other day I was feeling a little down, and like I hadn’t made a lot of progress lately. So I decided to try to find a “before” picture. There really weren’t many, because “before” I tended to avoid cameras, but I managed to find a picture from 2010. I still have quite a way to go, but since this picture was taken I have:

  • Gotten out of a really bad marriage
  • Spent a couple of years as a single mom
  • Found and married the man of my dreams
  • Taken my business to the next level
  • Lost, gained, and then lost about 40 pounds
  • Moved both my home and my office
  • Started doing CrossFit
  • Started eating paleo (including a few 21DSDs and Whole30s)
  • Become a Certified 21-Day Sugar Detox Coach

And now, I look more like this 🙂

Chocolate Bacon Chili

Instructions
  1. Brown the ground beef in a large pot.
  2. Add the bacon, peppers, and onions to the pot. Cook until the bacon is browned, and the onions are translucent.
  3. Mix in the rest of the ingredients. Simmer for an hour, or until you just can't resist grabbing a bowl!

  1. Brown the ground beef.
  2. Mix in the onions and cook until they are translucent.
  3. Add the rest of the ingredients and stir until blended.
  4. Allow the chili to come to a low boil, and then reduce to a simmer. Cook uncovered for about 2 hours.

Cincinnati Chili

I’ve been going to Hard Times Cafe for ages, and that was the first place that exposed me to chili with cinnamon in it. It was life-changing. Seriously. Cinnamon with beef?! It kinda blew my mind. Here’s my take on it. Want to make the “original” from HTC?   2. Add everything else, stir well, and bring to a boil.
  3. Simmer with the lid on for a couple of hours.
Recipe Notes

Want to make this in the slow cooker? Just follow step 1, and then throw everything into the slow cooker for about 6 hours. It's going to be a bit soupy, which is fine, because that's how Cincinnati chili is supposed to be served.
