My daughter loves tacos, so I try to make them pretty regularly. When I was living low-carb, I would eat everything except the tortilla. Last night was taco night at our house, and I just had to tweak my taco salad a tiny bit to make it more Paleo-friendly. This is what I ended up having on my salad:
- Beef taco filling: ground beef, garlic, onion, cumin, chipotle, black pepper, and a little bit of water
- Lettuce
- Jalapeño slices
- Salsa
- Avocado
- Lime juice
Everything was grass-fed and/or organic, and it was pretty tasty.
